Fruit and Vegetable Peels: Surprising Health Benefits
Parts of fruits and vegetables that are often discarded may contain more fiber than the edible flesh. Researchers from the UK studied 12 types of plant products and found that peels, seeds, and stems are often richer in fiber.

By changing cooking habits, one can increase fiber intake. For instance, approximately 10.7 million tons of food waste are generated annually in the UK, with over two-thirds being suitable for human consumption.
The study revealed that in 10 out of 12 plant products, peels and seeds contained more fiber than the flesh. For example, pumpkin peels have 9.25 grams of fiber per 100 grams, while the flesh has only 2 grams.
The research was published in the International Journal of Food Sciences and Nutrition.
